JUMBO CHICKPEA PANCAKE

So yeah, I haven’t very specific in my previous vegan recipes… well thanks to the festive season, I’ve been working my ass off to make this holiday the best ever for you when it comes to healthy living. I hope you’ve been enjoying the amazing recipes specially compiled for you and your family.
What I’ve got for you today is the first official breakfast recipe and since it’s my first I made sure it’s something you’d remember after your first bite. The Jumbo Chickpea Pancake is perfect for both breakfast and lunch and it’s super easy and quick to prepare.
But before we dive into the sweetness of this meal, I’d like to drop a few tips. Now, if you’re reading this and you’re also a body builder or your workout regularly then the Jumbo Chickpea Pancake is just right for you. After preparing the pancake, I got to discover that your topping whichever you choose really matters when it comes to the taste of the pancake. For my recent pancake topping I used a sautéed mushroom, onion and chive with a little bit of cashew cream but for this particular recipe, the topping used is avocado, hummus, salsa, red pepper flakes and cashew cream. And honestly, it tasted absolutely delicious and was really filling.
